Raw Cacao-Avocado Pudding (or Frosting)     

We all have experienced that inner battle of wanting to give our children only healthy foods but also letting them have treats like the rest of the children get. This recipe is really a happy medium; it’s made using several “super-foods” but yet it tastes better that the sugary store-bought pudding.

Raw cacao is very high in antioxidants, iron, and magnesium. Raw honey is an alkaline-forming food that contains natural vitamins, enzymes, powerful antioxidants and other important natural nutrients. It is also a natural anti-viral, anti-bacterial and anti-fungal. Avocados are rich in healthy fats and contain nearly 20 essential nutrients, including vitamin E, B-vitamins, folic acid, potassium and fiber and dates are rich in calcium, iron, manganese, copper, magnesium potassium and sulphur.

Don't judge this by its name! I've had a couple "avocado haters" try this and they weren't able to figure out what was in it; if you pick the right avocado; not too ripe and not too green, I assure you, you won't be able to taste it at all. It tastes just like regular chocolate pudding, minus the dairy and processed sugar. Best of all, it takes minutes to make as it requires no cooking!

This creation can also be used as a frosting for cupcakes, cakes, or any other desserts.

Ingredients: 

3/4 cup of mashed avocado
3 tbsp of raw cacao powder
Raw honey to taste (I use about 2 tbsp)
6 dates
1 tsp of vanilla extract
A pinch of salt
1/2 to 2 tbsp of coconut oil (optional)**

Preparation: 

Using a food processor or high-power blender or food processor, blend all ingredients together until smooth and there aren’t any large pieces of dates.

Eat as is, or chill and serve.

** Coconut oil is going to make it a little bit thicker/harder. If using as frosting, I highly recommend you add it to the recipe.
